This Brazil Topazio Natural Anaerobic is a microlot. Topazio is a cross between two popular varietals from Brazil: Red Catuai (which is a hybrid of Mundo Novo and Caturra) and Mundo Novo (hybrid of the two original coffee varietals, Bourbon and Typica). Planted on south-facing hills, the coffee trees are naturally protected from direct sun rays but receive sunlight all day long. Hot and wet summers favour intense flowering and uniform cherry maturation. After harvest, the ripe cherries have been stored in “barricas” for 60 hours. The fermentation occurs without water, and also without oxygen: the barricas have an airlock system.
Taste a complex and unique cup that is aromatic and sweet. Look for notes of fresh fruits like cherries, pineapple, lychee. Next to those this coffee shows a balanced sweetness with a winey body.
